    Mexican Bean Quinoa by @carrotsticksandcravings 💛 ¼ cup red quinoa ¼ cup white quinoa 1 tbsp EVOO 1 red onion 1 red bell pepper 1 yellow bell pepper 2 red chillis 2 cloves crushed garlic 2 corn cobs – kernels removed 1 tbsp paprika 1 tsp chilli powder (optional) 1 cup black beans – washed and drained 1 cup chickpeas – washed and drained 2 cups baby spinach 1 cup cherry tomatoes Juice of 2 limes Zest of one lime Sea salt and cracked pepper 3 tbsp coriander or flat leaf parsley 1 avocado a)Place quinoa in a medium saucepan with 1/2 cup of water or stock and bring to boil. Reduce to low heat and cover, and simmer for 15 minutes until most of the liquid has been absorbed. Add more water if needed. Fluff with a fork and leave covered to cool. b)Dice red onion, bell peppers and chilli, and sauté in a pan with EVOO, garlic, corn kernels and spices until corn is golden and starting to brown c)Mix black beans, chickpeas, chopped spinach and halved cherry tomatoes in with quinoa. d)Add lime juice, zest, salt, pepper and chopped coriander to the quinoa. e)Once slightly cooled add the corn mixture and mix through. f)Top with sliced avocado, extra chilli and lime. #bestofvegan

    Healthy Vegan "Nutella" by @healthyfrenchwife 💗 Ingredients: 1 cup of hazelnuts; ¼ cup of rice malt or maple syrup; 3 tbsp of cacao powder; 1 tsp of vanilla paste; 1 tbsp of water or more pinch of salt Steps: 1. Roast hazelnuts for 10 minutes at 175 degrees Celsius in the oven and remove their skins using paper towels once cooled down; 2. Mix the roasted and peeled hazelnuts in a food processor or blender until it becomes a soft paste; 3. Add in the cacao, sweetener, cacao, vanilla and salt and blend for a few minutes; 4. Pour in a jar and keep in the fridge for up to one week.  #bestofvegan

    Photo by @peachystudy As a student, Emma ( @peachystudy) wasn’t satisfied with her school-issued planner, so she turned to patterned tape, brush lettering and collage materials to up her homework game. “I really got inspired by the study community itself before I was a part of it. I would think, ‘This is so cool, maybe this is a niche I can fit into.’” Emma, who’s 17 years old and studying French, English and classical civilization at A Level in the UK, says that her journals, like her homework, are a constant work in progress. “Often when I do my pages, I’ll just start drawing things and counting all the squares to make sure it lines up.     I made another one of my vegan Blueberry lemon & poppyseed bread! Perfect for a sunday afternoon treat. 👌🏻 I am trying to empty my pantry before we move so I need to do lots of baking hehe but noone is complaining 😉😋 I hope you had a nice Sunday! I will pop the recipe for you here. 💗💗 and thank you to @thrivemags for the feature! 🌸💗 Vegan Blueberry Lemon & Poppyseed Loaf 2 cups of wholemeal flour 1/2 cup of oats 1 cup of soy milk or nut milk 2 1/2 tsp of baking powder 2 tbsp of lemon juice or 4 drops of lemon essential oil 1/3 cup of olive oil 1/2 cup of coconut sugar- more if you have a sweet tooth! 1 tsp of vanilla extract 2 tbsp of poppyseeds Pinch of salt Zest of 1 lemon 1 cup of frozen blueberries 1. Preheat your oven to 200 degrees Celsius and line a loaf tin with baking paper, 2. In a bowl mix all the dry ingredients together and add the nut milk, lemon juice and olive oil, 3. Mix together and gently fold in the blueberries. Do not over stir. 4. Place in your loaf and cook for 45-50 minutes until a skewer inserted is clean. 5. Leave to cool completely before slicing.

    Chocolate Cherry Pizza Tart by @twospoons.ca ❤️ Ingredients: • 1 cup (100g) gluten-free large flake oats • 1 cup (140g) almond pulp • 1/3 cup (60g) coconut oil, melted • 1/4 cup (60ml) maple syrup • 2 tbsp cocoa powder • 3/4 tsp salt • 1/2 tsp cinnamon • splash almond milk, if needed • 3 tbsp vegan chocolate hazelnut spread • 12-15 fresh cherries, plus more if desired • coconut flakes, for topping • dark chocolate shavings, for topping Directions: 1. Preheat oven to 350F (180C). Toss almond pulp and oats into a food processor and blend to combine. 2. In a saucepan melt coconut oil. Add maple syrup, cocoa powder, salt, and cinnamon, and stir to combine. Add liquid mixture to food processor and blend until ingredients are dough-like in texture. Add a splash almond if needed for blending. 3. Create tart shell by pressing the dough into a circular cake pan to be ~1/2 cm thick. (An 8-inch cake pan with removable bottom was used for this recipe). 4. Bake tart for 15-20 minutes, or until golden brown. Then remove from oven and let cool completely before removing tart from pan. 5. When cooled smoother tart in chocolate hazelnut spread leaving ~1/2 inch for the crust. Top with fresh cherries, coconut flakes, and dark chocolate shavings. Cut into slices and serve. #bestofvegan
